Ingredients
- 1/4 c. diced red bell pepper
- 1/4 c. diced green bell pepper
- 1 small onion, finely diced
- 1 small tomato, diced
- 1/4 tsp. dried leaf basil
- 1 c. egg substitute (equals 4 eggs)
- 1 Tbsp. hot or medium salsa
Directions
- Spray a skillet with nonstick cooking spray.
- Add bell peppers and onion; saute until onion in translucent.
- Add tomato and basil and mix well.
- Saute another minute.
- Remove from pan and keep warm.
